Take, for example, the black bean burger.

All it is, is black beans, onions, peppers, herbs and spices, and of course the bun and toppings.
If you use canned beans, the cost of the whole recipe (doubling for my big family), is about $2 for the "burgers." Add of course, the buns, tomatoes, onions, lettuce, ketchup, etc. Maybe a total of 4 or 5 bucks for the burgers. And it made about 10 or 12 burgers. Cheap. Easy. Totally healthy.
But will the kids eat it?
According to my super scientific observations, 100% of children will try it, 75% of those that try it will, in fact, like it.
*disclaimer* 2 of the children in the study helped themselves to leftover waffles half an hour before dinner time, and didn't participate in the study.
In other words, Landon is the only one who didn't like it.
But he didn't barf.
So I think it will be added to our repertoire.
